Personality:
Rey is first and foremost a stubborn person. As much as she's able to, she likes to do things her way. Life on Jakku wasn't easy, but she's been making it on her own for well over a decade, so the idea that she's more than capable of taking care of herself and her interests is pretty set in stone. She claims to have learned early on in her scavenger career that while other scavengers might need her, she didn't need them; which has made her headstrong and independent, even so much as to butt heads against the opinions of people that she looks up to and respects.
The hardships of her childhood have also fostered in her a deep-seated determination. The idea of giving up or losing hope doesn't come to her easily. Even in the face of slim odds, she would rather fight to keep going than to let herself succumb to doubt or failure. As the years dragged on at the Nima Outpost, Rey marked a tally for each one on her wall. To her, those weren't the number of days that she had been trapped there. They were the number of days that she had survived, and each one was one day closer to the day when her family would come back for her. Even when those tally marks numbered in the thousands, she never lost hope.
Life on Jakku also taught Rey to be resourceful. One of her number one rules was to always be prepared. When she went scavenging, she always made sure to have twice as much water as she needed and spare parts for anything in her speeder that was vital. After she left Jakku, she continued to make use of whatever she had around her, whether that meant tools or weapons--or abilities that she never knew she had. When she found herself facing off against Kylo Ren, she tapped into the Force as a resource that she could use, despite having no training with it. It was something that was offered to her, and she grabbed for it in a pinch.
But despite everything that Jakku taught her, it never took her trusting nature. She's fascinated by new things, she gives others the benefit of doubt so long as she has no reason not to, and she always veers towards believing the best of others. When Finn tells her that he's with the Resistance, she doesn't think for a moment to question it. She simply believes him without any need for proof. She's also downright charmed by the idea of the droid that she saved is on a secret mission for the Resistance, and even more-so when she finds out that it's to locate Luke Skywalker--someone that she had thought was only a myth. The look that she gets is downright child-like with it's innocence and excitement.
Jakku also never took her warmth and compassion for others, or her belief in doing the right thing. It might be buried at times beneath her need to survive, but at her core Rey is a good and kind person. When Unkar Plutt outrageously offered Rey enough food to last for a month in exchange for the BB-8 unit that she had rescued, she had a moment of temptation at the thought of how long she'd be able to live off that. She nearly caved. But in the end, she knew that the little droid's mission was more important, and she turned Unkar down. She treats those around her with respect, so long as they're not cruel or deceptive, and for as much as she can help it, she doesn't want to hurt others unless it's to protect herself or someone she cares about.
However, that doesn't mean that she's a pacifist, either. If provoked enough, her temper is a fiery one. Jakku instilled in her a sense that sometimes fighting back is the only thing others will listen to, and so if she feels the need to use her staff to attack or defend, she uses it with zero hesitation. She doesn't pull her punches, and it's been noted at least once that she's come at someone with intent to kill. Granted, Kylo Ren is an extreme case, where she felt he was hunting her down to kill her first; but the case still exists.
And on that note, Rey is unquestionably brave. Even when facing down someone that she thinks wants to kill her, she doesn't panic. She's clearly afraid, but she squares off with him several times, staring him down and refusing to relent to his intimidation. When she gets captured and taken to a First Order ship for interrogation, she breaks free and tries to stage her own escape with nothing more than a stolen blaster gun and her own wits.
Abilities:
For a long time, Rey's primary skill set consisted of things that she had learned while growing up in the deserts of Jakku. While working as a scavenger for Unkar Plutt, she familiarized herself with the layouts of the ships that she was scavenging, and devoured whatever information she could find. This includes a bunch of alien languages, the schematics for a wide variety of fighters and freighters, and even flight simulations loaded into an old Y-wing computer display that she found. She claims that she's never seen an Imperial command shuttle's hyper-drive generator, but if she was handed one, she could repair it and have the shuttle running in ten minutes--and probably fly it, too. So it's fair to say that she's something of a mechanic, a pilot, and a linguist wrapped up in one.
Part of the reason for all of that is that Rey is also a very powerful Force-user... even if she doesn't realize it yet. She says that there's something in her that's always been there; but she's never had a name for it. It's strongly implied when Rey says that she 'just knows' how to understand schematics and languages, that it's the Force pushing her to learn and grow.
In the Star Wars universe, the Force is the balance of Light and Dark energies, and it strives to keep that balance in everything--including in people. Rey is meant to be the balance to a powerful Dark Force user named Kylo Ren; but while Rey has grown up scavenging on Jakku, Kylo was training his Force powers. Thus, there are often moments where Rey can feel the Force pushing to make her stronger and more knowledgeable by sheer intuition, simply because she has so much ground to cover to catch up to Kylo.
However, this doesn't mean that she just suddenly knows things. She's a fast, intuitive learner--not an omniscient one. She didn't know anything about ships and languages until she started reading the manuals, she didn't know anything about the Jedi until she was told, and she didn't realize that she was Force-sensitive until her strong reaction to Luke's lightsaber and the visions that followed. But once those things happened, her ability to pick up new skills snowballed quickly. Within a day or two of first realizing that a strange power was inside her, she used it to counter Kylo's mental influence and infiltrate his thoughts (after he used it on her), and then segued into compelling her guard to release her restraints (on her third attempt). Later, she bested Kylo in a lightsaber duel, but only after fumbling with his attacks and losing ground for the first half of the battle. The turning point was when he specifically told her about the Force and her connection to it, and she realized that she could use that.
Ironically, Kylo Ren has been her best teacher so far. Everything that she suddenly 'knew' how to do was something she witnessed him doing first. The Force simply guided her instinctively to the 'how'.
Pertaining specifically to Life Aftr, Rey's Force abilities (and growth) will be limited to what she already knows, since she has no teacher here. This is primarily mental infiltration/compulsion, telekinesis, and wielding a lightsaber. If in the future, someone comes along who knows Force abilities, she may start to pick up more.
Rey is also shown to be very skilled with a quarterstaff, and shows little hesitation in using that when she feels she needs to. She can be pretty vicious. She also later adapts this skill to fighting with a lightsaber in The Last Jedi, once she gets a chance to practice. (I mention this from TLJ only as a note for how I intend to have her flesh out her combat abilities in a similar manner--by adapting her quarterstaff skill into her practice with the lightsaber.)
